Is it possible to reset a sdf file / database and still keep tabs and document types that I have made.

I don't think that is possible. That data is stored in the database. If you want to keep it you need to store that data somewhere external. For example with uSync.

you could also create a package containing your document types.. and then add that package to a clean umbraco install?
