All the redirects we set up in the redirect manager are 302 redirects. How can we change that default to 301????? 302 redirects are kind of useless as far as SEO

SEO checker only does 301 redirects so the 302's must be something else.

Are you using the in-built Redirect Url Management dashboard or a field on the content nodes?
If you've added a field with alias umbracoUrlAlias then these will only be 302 redirects (and are largely pointless as you say).
